Who doesn’t like breakfast for dinner? I love making breakfast for dinner. There is something about the smell and simplicity that attracts me to the idea. I thought of a couple of easy and simple recipes for breakfast as dinner. 

Egg Clouds

What you will need:

1. 4-6 eggs 

2. Salt and pepper

3. Large baking pan

4. Ketchup (optional)

What to do:

First you sperate the egg yolks from the egg whites. Then you place the egg yolks in separate bowl or leave them in the shells itself for safe keeping. Take the egg whites and whip them until they look nice and creamy, like the texture of whipped cream. You can do this by hand or with an electric whipper. Then you spray the baking pan with cooking oil and place the whipped egg whites on the pan in equal sized glops. Make a small hole inside the egg whites for the yolk. Carefully place the yolks inside the hole. Sprinkle with salt and pepper, squat a duple of ketchup if so desired. Place in oven which is heated to 375 degrees, you can preheat if desired for faster cooking results. Keep in oven for 8 to 12 mins depending on how done you like the eggs. Serve with or without toast, the eggs come out light as a cloud with a soft fluffy texture. Enjoy!

Sausage and Scrambled Eggwiches 

What you will need:
1. Sausage patties 

2. 4-6 eggs

3. Ketchup 

4. Salt and pepper 

5. Medium size skillet

What to do:
First you heat the skillet on the stove and grease it up with butter. Crack eggs in bowl and scramble. Pour scrambled eggs in heated skillet and stir with wooden spoon not to scratch the skillet and the make the eggs nice and fluffy. Cook on medium to low flame. When eggs have less liquid in skillet and appear yellow and fluffy they are done. Sprinkle with salt and pepper. Cook sausage patties in microwave for 2-3 minutes, then wait for them to cool a bit. Slice sausage patties in half long ways like a mini sandwich effect. Place a duple of scrambled eggs in the middle of the patty. Squat some ketchup inside and close up patty. Cute and simple with the look of a mini breakfast sandwich. Nice to serve for guest as appetizers as well or to entertain yourself for dinner. Enjoy!
