So I was home by myself, broke, and craving something sweet with limited ingredients at my disposal. I am not a professional chef or baker by any means just a creative problem solver with too much time on her hands. I was trying to find a way to substitute this ingredient for that with the limited selection I had in my kitchen cabinets, so I came up with a weird start to a delicious chewy gooey cookie recipe. Here it is below:
1. Canola oil 1/4 cup (I only had the spray lol)

2. 1-1 1/2 cup flour 

3. A tablespoon of crunchy peanut butter

4. Honey (squeeze a generous amount 3 tablespoons or so)

5. 2/3 cup sugar (depending on taste)

6. A small piece of fresh ginger (no skin)

7. A few shacks of cinnamon

8. 1/4 cup of dry roasted peanuts 


Blend all ingredients together in a large mixing bowl until consistency is cookie dough like. Add more ingredients depending on the texture and taste that you like the best. Remember, if it doesn’t taste good unbaked it will not taste good after it is baked (I learned this from trial and error experience lol). Preheat oven to 375 degrees for 5 mins before placing cookies inside. Prepare baking pan by spreading a thin layer of canola oil evenly on the bottom, then place a tablespoon dollop of the cookie dough onto the pan. Spread dough dollops by a few inches so the cookies have room to bake flat.


Place cookies in oven and bake for about 10 minutes (maybe a little longer or quicker depending on oven so keep a close watch). After cookies are done baking they will have a soft gooey center with crispy ends, let sit for about 5 minutes then enjoy! 


Cookies came out the best with zero margarine or butter just substitute with canola oil and honey! This was a delicious and surprising recipe experiment that was a great success. Try this out and let me know how your cookies taste. Have fun with it add and subtract make it your own.
